Arranque “roteño” with Tortilla Chips


Ingredients (Serves 4)

  • 4 Tomatoes
  • 4 Green peppers
  • 2-3 Garlic cloves
  • ½ kilo of “Telera” Bread
  • 125 ml Olive oil
  • Salt
  • Super-Mex Tortilla Chips


In a bowl, add salt, green peppers and garlic and blend until it looks like a paste. Add the hand cut bread, using only crumbs and chop the tomatoes. Blend it all together adding the olive oil.
In the past, the “arranque” was eaten directly from the bowl using bread crusts as silverware and was accompanied by raw red pepper. We suggest that you eat it with Tortilla Chips, a more modern combination but still super flavorful.
