Ingredients (serves 4)
- 1 green courgette / zucchini
- 1 red pepper
- 1 green pepper
- 1 yellow pepper
- 1 onion
- 500 gr. tuna
- Olive oil
- Salt and pepper
- 6 Super-Mex flour tortillas 20cm.
- Mixed, grated cheese
Dice all the vegetables and sauté until tender and golden. Season to taste. Cut the tuna into small cubes. Sauté with the vegetables for 5 minutes until the tuna is cooked (Optionally add a couple of tablespoons of salsa Super-Mex Nacho Dip). Remove from the heat. Add a tablespoon and a half of the sautéed vegetables and tuna to the center of the flour tortilla and roll it up into a fajita.
Put the fajitas in an oven tray with the seam facing down. Repeat this action until sautéed mixture is finished. Cover all fajitas with the mix of cheeses to taste and put in the oven on broil for 10 minutes. To serve, make a diagonal cut in the center of the fajitas.
The ration per person equals three half fajitas. This recipe can be made with tuna or any other fish or meat.
Serve with salsa Super-Mex Nacho Dip or Guacamole Dip.
